BBQ Lentil Sloppy Joe Recipe (Vegan Sloppy Joes)

Ingredients

1 ¼ cup green Lentils, uncooked    

4 sprigs of Thyme

2 Tbsp Coconut Oil    

1 cup Onions, small chop    

4 cloves of Garlic, smashed and chopped

½ cup of green Bell Pepper, small dice

½ cup of yellow Bell Pepper, small dice

4 stalks of Green Onions, small chop

1 cup Leeks, small dice

¼ cup Water or Vegetable Stock, warmed

½ tsp of Mustard powder

1 tsp of Sea Salt

1 jar (18 oz) of True Made Foods BBQ Sauce

Directions

In a medium saucepan bring the lentils, thyme, salt and 3 cups of water to a boil.  Reduce to a simmer and cook covered for 20 minutes on a low heat.  After 20 minutes, drain out any excess water, discard of the thyme stems and set aside.  The lentils should still be tender.

In a heavy bottom pot like a dutch oven, heat the coconut oil over medium-high heat. Add the onions and garlic and cook for 1 minute before adding the rest of the vegetables.  Stirring for 3 minutes or until softened.  Empty the entire jar of True Made Food BBQ Sauce to the pot and add the ¼ cup of warmed water or stock (I rinse the bottle with the liquid to get out all the content).  To that, stir in the lentils, mustard powder and sugar.  Bring to a boil then reduce to a simmer and cook covered for 30 minutes on low.

Divide the lentils among the toasted rolls and eat as is or dress with the topping of your choice.
