Ingredients

1 can (15 oz) of black beans, rinsed & drained
2 cloves of garlic
2 tbsp ground flaxseed meal
2 tbsp True Made Foods Ketchup
2 tbsp True Made Foods Veracha Vegetable Sriracha
¼ cup quinoa flakes or quick oats
½ tsp black pepper
2 tsp no salt added Italian seasoning
2 cups + 2 cups marinara sauce
4 hoagie rolls
Zucchini, spirals
4 Bocconcinis
Olives
Capers

Directions

1. Preheat oven to 350F. In a food processor pulse to combine black beans, garlic, flaxseed meal, True Made Foods Ketchup, True Made Foods Veracha, quinoa flakes, black pepper and no salt added Italian seasoning.

2. Form this ‘batter’ into 1 1/4 inch balls (~2 tbsp each) and place on parchment paper lined baking sheet. Bake for 15 minutes, then flip balls + bake for an additional 15 minutes, until exterior is golden brown.

3. In a medium skillet over low heat, warm 2 cups marinara sauce and add bean balls. Once sauce is heated through, assemble 4 subs with spiralized zucchini and additional marinara sauce.

4. To make “eyeballs” layer sliced bocconcini and olives and place a caper in the center to resemble eyeballs, as shown in the image. Enjoy immediately! :)
